Looking for a light salad to bring to wine club, I came across this recipe at AllRecipes.com: Fruity Curry Chicken Salad.
Of course, I made some changes:
Ingredients
- 1 12.5oz can of Chunk Chicken Breast or one whole rotisserie chicken breast
- 1/2 teaspoon onion powder
- 1 apple – cored and diced ( I used a Gala apple)
- 1/3 cup cran-raisins
- 1/2 cup seedless green grapes, quartered
- 1/2 teaspoon ground black pepper
- 1 teaspoon of Jane’s Krazy Mixed-Up-Salt
- 2 Tablespoon mayonnaise
- 1/3 cup plain greek yogurt
Directions
Mix all ingredients in a large bowl, chill in refrigerator. If possible, make the day before to allow flavors to develop.
Serve with crackers or cut pita bread or stuff in croissants.
